Award-winning pastry chef has big plans in El Paso

El Pasoan Julie Adauto has more than a sweet tooth when it comes to cakes, pies and petit fours. She’s a classically trained pastry chef and the American Culinary Federation’s 2006 Regional Pastry Chef of the Year and ultimately expanded her skills at The French Pastry School in Chicago.
 “My mom always wanted to send me to baking school because she thought I had talent.” But Adauto didn’t get serious about the idea until her mother passed away in 1999. To honor her mother’s memory, she decided to attend the Culinary Academy in San Francisco where as one of seven students,she learned to put together menus for the multiple restaurants and catering programs operated by the school. Graduating at the end of the year-long program, Adauto landed a job as assistant pastry chef at the Omni Golf and Spa Resort in Tucson where she and the pastry chef worked on such tasks as baking cakes for the next day that then had to be decorated, cut and plated up for 300 people.
​ Two years later, Adauto returned to El Paso to help care for her family. It was then that she worked for Mesa Street Bar and Grill and later Mezze as the restaurants’ pastry chef. “I see a niche market here. We need a nice shop with beautiful cakes and other bakery items. If I could someday have my shop, that would be perfect,” she said. “What I love most about this profession is the creative side of it. And, if you make a mistake, you can start over. Nobody gets hurt. “I feel this is what I was meant to do because I think that - most of all - I just want to make people happy.”
